Do you mean speaking Greek in your videos?
If you do a YouTube channel in Greek you will have a smaller audience, although you will also have more of a target audience that may have a higher demand. I'd say definitely give it a go, trying things is really the only way to see if they work on youtube. You could also try having 2 separate channels, one for English and one for Greek.
