There's a few tools for that, I personally use a YouTube Downloader to convert videos because it can do that ;)

It's not really needed. Put it into your Channel keywords here instead: https://www.youtube.com/advanced_settings The shorter a Name is, the better. Having Gaming in it won't help you at SEO whatsoever as the term "Gaming" is saturated and you won't come up there.
